Before there was a famous red-and-white can with an oversalted condensed version of the stuff, there were bechamel sauces, like this one randomly searched up at allrecipes.com:

What’s really silly and fun? re-creating those casseroles some of us of a certain age had something close to weekly during the 60s and 70s, like the tater-tot casserole, or yon green-bean casserole, made anew with (gasp) fresh, real ingredients.
Warning: Experiments such as these may make a person give away all the red-and-white cans in their cupboard and begin to develop a serious relationship with their perfectly-seasoned cast iron skillet.
